So I have always been a Starbucks lover! I loved their spiced pumpkin lattes – yum! A few months ago I decided that I needed to have a latte every morning to get me moving but I didn’t want to pay for Starbucks AND I know that there is nothing “REAL” about a Starbucks latte — well maybe the soy milk and the espresso but all the syrups are bad news.
So I started on the quest to make my own WITHOUT a fancy espresso maker or milk frother. I have succeeded. Now let me tell you — I hate regular plain coffee, I like my latte with a little thickness and I like sweet! So here it is:
1 cup – coffee – brewed
1 cup – vanilla coconut milk (does not give coffee a coconut flavor)
2 Tbls – real maple syrup
sprinkle of cinnamon or pumpkin spice
Dollop of coconut cream
Mix all of the ingredients together. I put mine in the microwave to make it piping hot and then I dump it into my coffee thermos. Delightful! At first you might think this is high in fat — which it is BUT coconut fat is a very healthy fat that your body actually needs. Maple syrup is a great natural sweetener — and like I said — I like it sweet so you might change the maple syrup amount.
Here is my trick about coconut cream. I buy a can of coconut cream at Trader Joes — obviously I can’t use the whole can in a week SO — get ready for this cause it’s good — I put the cream in an ice cube tray and freeze the cream — when frozen I pop the cream out and store in a zip lock baggie — then every morning I just pop a cube out of the freezer and into my drink. The coconut cream, to me, adds the bit of thickness that I like.
All in all — great coffee drink and it’s even healthy for you! I have had a Starbucks gift card in my purse for over a month and I can honestly say “Mine is Better”! Enjoy!
